Description
Tasty baked goods for the whole family. Bread takes time to make. The process is slow, but the result is rewarding. Pay attention to kneading the dough. Because flour varies in gluten content, you may need slightly less or more liquid. Serve warm or cooled. Perfect with tea.

Prepare the necessary ingredients.

In warm water, mix the yeast and 1 tsp of sugar taken from the total amount. Leave for 15 minutes.

In a bowl, mix together both kinds of flour, the remaining sugar, salt, and 2 tsp rosemary.

Pour in the yeast mixture. Begin stirring with a spoon.

Add vegetable oil and knead by hand. At first the dough will be hard to gather, but it will come together gradually. You need to knead it for at least 7–10 minutes, so if you have a bread maker, you can knead it in there. If not, you need to knead the dough thoroughly and slap it against the counter so it turns out uniform and smooth.

Shape the dough into a smooth ball. It may stick a little to your hands—that’s acceptable. Transfer it to a bowl and make a cross-shaped cut on top. Cover the bowl with plastic wrap and leave it in a warm, draft-free place for 1 hour 30 minutes.

After the time has elapsed, the dough will increase in volume.

From half a lemon, remove the zest and squeeze the juice. Combine.

Add the juice and zest to the bowl with the dough. Mix them in. For easier kneading, add 2–3 tbsp of flour.

Add the remaining rosemary and roll the dough in it.

Transfer the dough to the work surface. Stretch or roll it into a sheet. Fold the dough like a book.

Grease a rectangular baking pan with vegetable oil. Transfer the dough into it. Make two longitudinal cuts on top, cover with a kitchen towel and leave for 30 minutes. When time is up, put the pan with the dough into an oven preheated to 220°C and bake for 10 minutes; then reduce the temperature to 180°C and bake for another 30 minutes.

Remove the baked bread from the oven.

Transfer to a board. Cool.

Serve “Gourmet” bread at the table. It goes especially well with fish dishes and appetizers.
