In warm milk, dissolve salt, fructose, and yeast, add 2 tablespoons of flour from the total amount. Place in a warm spot for 15 minutes to activate the yeast.

Pour kefir (or ryazhenka) into the sponge, along with 100 ml water and olive oil, add ground coriander, and stir to combine.

Add the flour and knead the dough.

Gather the dough into a ball, cover it, and place it in a warm place to rise for 2 hours.

Place the loaf “seam side up” on a cloth (tea towel or dish towel) that has been rubbed well with flour; prop the sides up with rolls of towels or napkins. Proof the loaf for 45–60 minutes.

Transfer the loaf to a baking sheet, preheat the oven to 250 degrees, bake for 10 minutes at 250 degrees, then reduce the temperature to 180 degrees, and bake for about 50–60 minutes longer.

Place the finished bread on a cooling rack, cover with a cloth or towel, and cool completely.
