Description

The recipe won't take much time. The dough's color is achieved using natural ingredients – this option is far preferable to using food coloring. In addition to the cocoa, paprika, and turmeric mentioned in the recipe, you can tint the dough with spinach and matcha tea – for a green color, carrot and pumpkin – for yellow, beetroot and tomatoes – for red, berries for various shades of blue, lilac, and pink. There's plenty of room for imagination.

    Mix the warm whey with sugar and salt, add the yolks and 3 tablespoons of butter. Stir well and gradually incorporate the flour mixed with yeast and bran. Knead an elastic dough. I knead it in a bread machine.

    Divide the dough into three parts. Grease one with butter and cover it with plastic wrap in a warm place to rise.

    Season the second part with paprika and turmeric, add half a tablespoon of cocoa and half a tablespoon of oil. Knead the dough.

    Knead the third part with cocoa and the remaining butter. Let the dough rise until it doubles in size.

    Line the baking sheet with parchment or a mat. Pinch off four small pieces of the light dough and shape the paws. Roll a larger piece into a head.

    Form small balls from the yellow and brown dough. Lay the dough in a circle in two layers, alternating colors and creating a turtle shell.

    Make the second turtle simpler – roll the dough into strips and lay them in a spiral, first the brown dough, then the yellow dough around the legs and head. Make knife cuts in a checkerboard pattern, imitating the shell. Cut the claws on the legs, insert black peppercorns, imitating the eyes. Bake the turtles at 180 °C. For the first 10 minutes bake with steam by pouring half a cup of hot water onto the bottom of the oven. It’s better to brush the turtles simply with milk; using an egg‑yolk glaze makes the crust too brown and the colors are not as visible.

    Spread butter on the finished bread and cover it with a napkin until it cools.
