Gluten-free bread in a bread machine

Description

Delicious baked goods for the whole family. This version is a great substitute for a loaf or white bread. You can serve it with the first course or make sandwiches with it. Part of the rice flour can be substituted with corn, flax, or another gluten-free flour. Fresh yeast can be replaced with dry yeast—follow your machine’s instructions for the order of adding ingredients. Corn starch can be replaced with tapioca starch; potato starch is best avoided. It can be served with tea or coffee.

    Prepare all the ingredients needed for making gluten-free bread in a bread machine.

    Dissolve fresh yeast, salt, and sugar in warm water. Place the bowl in the bread maker, insert the rotating paddles, and pour the liquid into the bowl.

    Pour the rice flour into the bowl.

    Pour vegetable oil into the bread maker pan.

    Add the cornstarch to the remaining ingredients.

    Turn on your bread maker and select the **“Gluten-free bread”** or **“Quick bread”** programme. After kneading, don’t expect a firm ball of dough — it will stay quite liquid, because there is no gluten to bind it.

    This is how the bread will look in the middle of baking. At this moment it’s best to remove the paddles in the bread machine.

    After the machine beeps, turn off the appliance and take the bread out of the bread machine. Wrap the finished bread in a towel, let it cool completely, and serve.
