The most important thing is to knead the dough well and let it rise before baking. This recipe doesn't require prolonged kneading—the bread always turns out fluffy with a delicious crust. Add sugar and yeast to a glass of warm water, stir and let stand for 5-10 minutes to make sure the yeast is active: a foamy layer should form.

In a dough mixing bowl, thoroughly mix the sifted flour with salt.

Add the yeast mixture to the bowl with flour and mix until smooth.

Sprinkle the work surface with flour, place the dough on it, and knead for 1–2 minutes, adding flour as needed so the dough is not sticky. The dough should remain soft, not stiff. Shape it into a ball.

Take a plastic bag, spray it with olive oil, and transfer the dough into the bag. Make sure the dough is coated with oil on all sides. Seal the bag tightly and refrigerate overnight.

The next day, place the bag with the dough on the table, slightly open it, and knead the dough directly in the bag to remove all air bubbles from the dough.

Seal the plastic bag again and let the dough sit on the counter for 1 hour, until it reaches room temperature. During this time, the dough will warm up and rise.

Preheat the oven to 180 degrees. Sprinkle a little cornmeal on the bottom of the bread baking pan.

Dust the table with flour, place the dough on it, and knead it slightly to absorb all the olive oil. Flatten the dough into a sheet with your hands, roll it up into a log, and place it into a baking pan.
