Cheese dumplings (Khinkali)

Description

The dish is prepared without unnecessary complications. I think everyone who is at least somewhat familiar with Georgian cuisine knows that khinkali are most commonly made with minced or ground meat, but there are also other, less common fillings. Today I'll tell you how to make khinkali with cheese. Such a dish can only be found in a few restaurants in Georgia; in our region, meat filling still predominates. But this is no problem for us, as we can easily prepare cheese khinkali at home and enjoy the taste of this amazing dish. The finished dish can now be served.

    First, we need to knead a firm dough from flour and slightly warm water. Cover the finished dough with a towel and let it rest for 10–15 minutes.

    For the filling, grate the cheese on a coarse grater.

    In a small bowl, beat the egg and mix it with the grated cheese.

    Now divide the dough into several parts and roll out each part in turn into a thin sheet, then cut small circles from the dough.

    Then roll out each circle a little more and place the prepared filling (1 teaspoon) in the center.

    Now lift the edge of the dough and fold it upward to create neat pleats; gently press the top of the dumpling to seal.

    You can freeze part of the prepared dumplings, and cook the rest in slightly salted water for 8–9 minutes after boiling. Then, remove the dumplings from the water with a slotted spoon, place them on a plate, and cover with a towel for 5 minutes.
