Instructions
- 1
Step 1

Let's start by preparing the dough. For this, break the eggs into a deep bowl, add a little salt, and beat everything slightly.
- 2
Step 2

Then pour vegetable oil and milk into the bowl, and mix all the ingredients.
- 3
Step 3

And begin gradually adding flour to this mixture, kneading the dough. When it becomes difficult to stir with a spoon, transfer the dough onto a floured surface and thoroughly knead by hand. In the end, the dough should be smooth and quite firm.
- 4
Step 4

Wrap the finished dough in plastic wrap and let it rest for 40-50 minutes.
- 5
Step 5

Meanwhile, let's prepare the filling. First, grind the meat together with onion and garlic through a meat grinder (use the coarsest plate). Add chopped herbs, spices, and salt to the minced meat, then mix everything thoroughly.
- 6
Step 6

Pour the broth into the meat mixture and mix until smooth.
- 7
Step 7

Knead the risen dough once again and cut off a piece. Roll it into a sausage shape, then cut it into small equal pieces.
- 8
Step 8

Roll out each piece of dough into a thin flatbread.
- 9
Step 9

Place a small amount of the prepared filling, about 1 tablespoon, in the center of the flatbread.
- 10
Step 10

Now carefully gather the edges of the flatbread, forming pleats, and pinch the top of the dough together.
- 11
Step 11

We repeat the same process with all the remaining dough until it is used up.
- 12
Step 12

When all the dumplings are assembled, pour water into a pot, salt it, add bay leaf to the pot, and place it on the stove. Put the dumplings one by one into the boiling water.
- 13
Step 13

After all the khinkali float to the surface, cook them for about 10 minutes.
- 14
Step 14

Place the finished dish on a plate with a slotted spoon and sprinkle the khinkali with ground black pepper. If desired, you can add your favorite sauce. Enjoy your meal!
