Description
Perfect for serving with tea and coffee. The diameter of my frying pan is 26 cm. You can omit the onion if you prefer. Additionally, you can add some grated cheese to the filling along with the pumpkin.

Lay out all the ingredients on the table for convenience. Wash the pumpkin. Peel the onion.

In a large bowl, pour warm water, sift all the flour into it, and add salt and baking soda.

Knead a soft, smooth dough that does not stick to your hands. Shape the dough into a ball, place it in a food-grade plastic bag, and let it rest on the counter for 20–30 minutes.

Meanwhile, prepare the pumpkin filling. Chop the onion into small cubes.

Peel the pumpkin, remove the seeds, and cut into small cubes.

Place the pumpkin cubes in a saucepan with water and boil until soft—about 15 minutes from the time the liquid begins to boil.

Heat vegetable oil in a frying pan and add the chopped onion.

Sauté over medium heat, stirring regularly with a spatula, until golden in color.

Combine the soft pumpkin cubes and fried onion in a large bowl.

Grind these ingredients into a paste using a pestle. Do not use a blender, the consistency will not be right!

Divide the dough into equal parts, each weighing approximately 70 grams.

Roll out each portion with a rolling pin as thinly as possible into a round flatbread on a work surface dusted with flour.

Place about 2 tablespoons of pumpkin filling onto one portion of rolled-out dough.

Cover the filling with the second piece of rolled dough and seal the edges in a convenient way, for example, with a fork.

Heat a non-stick skillet over medium heat. Place the hingalsh dough pieces onto the skillet and fry on both sides until golden brown spots appear. The flatbreads may puff up during frying.

Pour boiling water into a large bowl and quickly dip each ready-made pancake into the hot water to make them extra soft.

Then place each flatbread on a plate after pouring boiling water over it, and generously brush it with butter on all sides.
