Hake has its own distinct fishy smell. But that's not a bad thing! It's precisely this characteristic we love about hake. In this recipe, however, an original vegetable marinade will help you eliminate that specific odor.

    1. Rinse the pollock and cut into small pieces. Season with salt and pepper, add fish spices, and place in a deep baking dish.

    2. Generously sprinkle the fish pieces with lemon juice to eliminate the fishy odor. Let the fish marinate for about 2 hours. Wash and peel the onion and carrot. Cut the onion into small cubes. Slice the carrot into thin strips or grate it. Sprinkle the vegetables over the fish. They will also help remove the fishy smell.

    3. Brush the fish with oil and place it in the oven. There's a small trick to keep the fish from becoming dry: slice pork fat into small pieces and insert them into the fish fillets. Cover the baking tray—use a lid or foil—and bake for about an hour at 190 degrees. Meanwhile, grate the cheese on a medium grater and slice the pickled cucumbers into thin pieces. After an hour, remove the tray from the oven. Sprinkle the fish with grated cheese and the sliced cucumbers. Return the tray to the oven for 5–7 minutes.
