
Hake with spicy sour cream sauce
Description
Hake has almost no bones, making it perfect for a festive table. The spicy sour cream sauce complements the fried fish wonderfully.

1. Thaw the fish, remove the scales, gut it, then cut into pieces about four to five centimeters thick. Rinse thoroughly under running water. Let the water drain off, then salt the fish and coat it in flour (corn flour works especially well). Fry in hot oil for about three minutes on each side.

2. Break the cauliflower into florets, place in salted boiling water, and cook for five to seven minutes. Drain in a colander to remove excess water.

3. Prepare the spicy sauce: peel and finely chop the onion, then sauté it on a heated skillet until translucent. Add sour cream, finely chopped dill, crushed garlic, pepper, basil, paprika, and white wine. Simmer for about five minutes over low heat.

4. Place the fried fish on a serving dish, along with the boiled cabbage. Garnish with herbs and lemon. Serve the sauce separately.
