
Hake with pistachios

1. This dish involves several steps, so I'll explain everything step by step. Use hake without the head and cleaned. There are many variations of how to prepare it, and here is one of them...

2. We will stuff our fish with vitamin-enriched butter, which is prepared as follows: finely chop the herbs and mix them with butter.

3. Now place it on plastic wrap and roll it up into a log. Put it in the freezer until needed.

4. Now we make the "coating" for the fish: grate the hard cheese on a medium grater.

5. Peel and chop the pistachios. I usually wrap them in plastic wrap or a bag and crush them with a rolling pin so they don't scatter.

7. Grind the crackers in exactly the same way. I used homemade ones, but you can also buy ready-made wheat crackers.

9. Now take our fish, trim off the fins, and take out our vitamin-enriched oil. Chop the oil with a knife, make incisions in the fish, and insert the oil into the cuts.

10. To prevent the oil from leaking out and to let it soak into the fish, coat the fish in flour and fry it in a pan on both sides until golden brown.
