Prepare the specified ingredients.

Rinse the sturgeon in water, gut it, and rinse inside and out. Cut off the head, tail, and fins. Remove the backbone if the fish is large. Cut into small pieces and place the cut pieces in a deep container.

Season with salt and pepper, pour in the vinegar, and mix thoroughly. Place in the refrigerator for at least 2 hours.

Peel the carrot and onion and rinse them under water. Grate the carrot on a Korean-style carrot grater into a deep bowl. Slice the onion into half rings.
