
Catfish hoe
Description
My husband is a keen angler—and whenever he goes fishing, I always fix him snacks from what he catches himself—for example, hei made from catfish. It makes a terrific appetizer, and quite a filling one, too. If you chop the vegetables and fish very fine, you can even put together open sandwiches with hei for a holiday spread. Delicious and fuss-free. You can serve it warm or chilled.

Gut the catfish and cut off the head. Wash and cut it up.

Cut into pieces and pour vinegar over.

Peel and finely chop the onion. Finely dice the cucumber and garlic the same as the onion. Add the vegetables to the catfish and mix.

Heat vegetable oil in a frying pan. Pour the oil and soy sauce over the fish. Mix well.

Arrange the catfish hoe in jars. Put in the refrigerator. The catfish hoe needs to infuse for 12 hours. No less. Done.
