
Fish Hweh
Description
A tasty appetizer for any gathering. Try making the famous salad "Hye". Nothing complicated.

Step 1

The fish should be cleaned of the backbone and bones. Do not remove the skin: this way the fish pieces will not fall apart in the salad. After marinating, the skin becomes very soft.

Cut into small strip-shaped pieces approximately 3–4 × 1–2 × 0.7–1 cm.

Place the cut fish in a container with a tightly fitting lid. Pour in 2–3 spoonfuls of 70% acetic acid. I use acid specifically because in that case the fish marinates in less time (about 35–40 minutes). If you use table vinegar for marinating instead, it is better to leave the fish overnight. After pouring the acid over the fish, mix thoroughly. Cover the container with the lid and leave the fish to marinate. During this time, stir it several times.

While the fish is marinating, peel and slice the onion into rings or half-rings.

We will also peel the garlic and slice it into thin strips.

Cut 2 hot pepper pods. If you don't like spicy food, you can leave the pepper out, or add sweet dried pepper instead—for aroma and color.

I didn't have fresh cilantro, and it was too late to run to the store, so I crushed dry cilantro and cumin.

Once the fish had marinated, it became lighter in color. To check whether the fish was fully marinated, I took one piece of the largest size and cut it crosswise. If the inside does not differ in color, the fish is ready. If the inside is darker, leave the fish to marinate for a few more minutes.

Added to the fish sliced onion, lightly rubbed between my palms (so it would release a little juice), garlic, pepper, and spices, and poured in a few spoonfuls of soy sauce so the salad would taste salty (I did not add salt). Mixed everything well.

Left the salad to marinate for another 40–60 minutes. Done! We ate it all in one sitting!
