
Hwe from lungs
Description
The recipe won't take much time. Light-tasting khe resembles cold shashlik and is sure to please men — they love meat dishes with a sharp, spicy flavor. Remember that khe tastes much better on the second day after resting in the refrigerator — it develops a bright garlic aroma. The appetizer is ready. Serve immediately.

Prepare the specified ingredients.

Rinse the lungs in water, trim off the large tubes, and place them in a kazan or a deep pot. Cover with hot water and put the vessel on the stove. Remember that lungs float while boiling, so they need to be simmered for 1.5 hours, turning them over from time to time.

Meanwhile, peel the onion and rinse it in water. Slice into half-rings and place a quarter of the sliced onion in a deep bowl or pot where the khe will marinate. Put one and a half portions of the sliced onion into a skillet and heat the vegetable oil in it.

Sprinkle ground coriander over the sliced onions in the pan.

Add the red pepper. If desired, replace it with ground paprika if you don't like spicy dishes. Sauté everything for about 2–3 minutes, until the onion is soft, so the spices release their aromas and flavors.

Place the sautéed onion in a bowl with the fresh sliced onion. Press in the peeled and washed garlic cloves as well.

After 1.5 hours of cooking, the lungs will be fully done. Remove them from the broth and let cool. Drain the liquid left from cooking the offal — it will not be needed.

Cut the cooled lungs into strips, medium-sized cubes, and so on, removing the large tubes. Place in a bowl with the onion.

Season with salt and pepper, add the sugar, and pour in the vinegar.

Mix everything thoroughly. Cover the container with plastic wrap and place in the refrigerator for at least 2 hours, stirring from time to time so the garlic aroma envelops the entire dish.
