Kharsha
Description
You can make kharshu from ordinary semolina. The result is just as tasty, crumbly, and tender. Be sure to try making it.
Instructions
- 1
Step 1

Prepare the necessary ingredients.
- 2
Step 2

In a bowl, mix semolina, sugar, baking powder, and salt.
- 3
Step 3

Add butter that has softened but not fully melted. Rub it in with your hands or a spoon. It is important that the grain is fully mixed with the butter.
- 4
Step 4

Pour in the warm milk.
- 5
Step 5

Knead the dough. It should hold its shape well. So if it is too runny, add a little semolina. Up to three tablespoons is allowed. Leave the dough in the bowl for 10 minutes.
- 6
Step 6

After the time is up, divide the dough into 10 portions. Roll each into a ball.
- 7
Step 7

Press each ball flat with your palm or a spatula to a thickness of no more than 0.5 cm.
- 8
Step 8

On low heat, fry the pancakes. Cook for 5 minutes on each side.
- 9
Step 9

Because kharsha has a very delicate texture, turn it over only after one side has browned.
- 10
Step 10

Transfer the finished pancakes to a plate.
- 11
Step 11

Serve kharshu with green tea; serve the jam separately.
