Step 1

1. Prepare the dough. Whisk the yeast and 1 teaspoon of honey into 2/3 cup of warm water and let stand for several minutes. In a large bowl, mix together the yeast mixture, oil, remaining honey (1/3 cup), eggs, and egg yolk. Add flour and stir with a wooden spoon. Turn the dough out onto a floured surface and knead for about 5 to 8 minutes, until you have an elastic dough. Place the dough into a greased bowl, cover with plastic wrap, and set aside for 1 hour, or until the dough has doubled in volume.

2. Peel the apples, cut them in half, remove the cores, and slice them. Sprinkle the apples with lemon juice to prevent browning. Place the dough on a floured surface and shape it into an oblong form. Place 2/3 of the apples on one half of the dough.

Step 3

3. Fold the dough in half, add the remaining apples, and fold the dough in half again, pressing the apples into the dough. Shape into a ball and let the dough rest for 30 minutes.

Step 4

4. Divide the dough into 4 parts and roll each part into long strands about 30 cm in length. If apple pieces fall out of the dough, press them back in with your fingers. Place two strands perpendicularly to each other to form a "plus" sign. Connect it with another similar figure made from the two remaining strands, as shown in the photo.

Step 5

5. Connect the 8 ends together as shown in the photo.

Step 6

6. Tuck the ends under the bottom part of the bread.

Step 7

7. Place the bread on a baking sheet lined with parchment paper. Beat an egg and brush the bread with it using a brush. Let the dough rise for 1 hour.
- 8
Step 8

8. Preheat the oven to 190 degrees. Brush the bread with egg once more. Sprinkle with sugar if desired. Bake in the middle of the oven for 40–45 minutes until golden brown.
