
Khachapuri in the oven

First, knead the dough and let it rest. Then roll it out into a sheet, place a filling of grated cheese and herbs on it and pinch the edges, gathering the filling inside. Carefully roll out the flatbread with the filling and bake it in the oven for half an hour at 200 degrees. Cool the ready khachapuri to a warm temperature and serve it on the table. Serve it warm or chilled. Perfect with tea.

From all the ingredients (except the cheeses and herbs) knead the dough. It’s convenient to do this in a bread machine. Let it rest for a while to rise well.

Grate the cheeses and mix with chopped herbs.

Roll out the dough into a sheet about 0.5 cm thick. Spread the filling on it. This amount of ingredients will yield two flatbreads, so divide the filling into two portions as well.

Gather the edges of the dough into a knot and pinch them.

Turn the dough with the filling seam side down and gently roll it out. Prick the dough with a fork and brush with egg yolk. Sprinkle the baking sheet with flour, place the dough on it and bake in the oven for half an hour at 200 °C. Cool the finished khachapuri to a warm temperature and serve.
