Perfectly pairs with tea and coffee. It is said that classic khachapuri is never made with herbs. But in Georgia, there are as many recipes as there are people. Every housewife has her own unique version, so why shouldn't this recipe exist too? Once in a Georgian restaurant, I tried herb-filled khachapuri and really enjoyed it. That's why I decided to make herb khachapuri at home. The recipe is quite simple; the main thing is not to add too much flour to the dough and to cook the khachapuri thoroughly. My advice to you: when making khachapuri for the first time, add flour gradually to achieve delicious, soft dough. Brush the hot khachapuri with butter—it will taste even better. Separate the egg whites from the yolks. Melt the butter, making sure it is not hot when mixing the dough. The milk should be at room temperature.

Knead the dough. Dissolve the salt in milk and mix with the butter. Beat the egg whites and add to the milk mixture. Combine the flour with baking soda and gradually sift into the milk mixture. The dough should not be stiff!!! Wrap the dough in plastic wrap and let it rest for 20–30 minutes.

Grate the cheese on a medium grater. You can use feta, suluguni, or any other soft cheese.

We wash the greens, dry them, and chop. We mix the grated cheese, egg yolks, and greens well.

Divide the dough into 3-4 parts. Divide each part into two pieces—one larger and one slightly smaller. Roll out each piece into a thin pancake the size of the frying pan in which you will bake the khachapuri.

Divide the filling depending on how many khachapuri you decide to make. Place a portion of the greens on a slightly thicker pancake and cover with a thinner one. Seal the edges well.

Fry khachapuri on a preheated heavy skillet, greased with vegetable oil. The heat should be slightly above medium.

When the pie turns golden brown, flip it over. Cover the pan with a lid and cook the second side. Keep an eye on it periodically to prevent burning. The first side takes about 6-8 minutes to cook, while the second side takes about 3-4 minutes.
