
Cheese and cottage cheese khachapuri baked in the oven
Description
Delicious baked goods for the whole family. There are various types of khachapuri: Megrelian, open-shaped like a boat, with different kinds of cheese. Personally, I prefer making this version of Megrelian khachapuri. To prepare khachapuri with cottage cheese and cheese in the oven, choose a hard rennet cheese, and use fairly fatty cottage cheese (I try to buy homemade at the market). You can also add cilantro or parsley to the filling. Be sure to extinguish the baking soda before adding it to the dough. Serve cooled down or slightly warm.

Knead the dough for khachapuri: sift the flour, add sieved cottage cheese, egg, crushed butter, extinguish the baking soda with vinegar and add it as well. Add a small amount of salt, literally a pinch. Knead a firm dough.

Prepare the filling: grate the cheese (you can do it coarsely). Add egg, mayonnaise, minced garlic, and optionally add chopped herbs to taste. Mix well.

Line a baking sheet with parchment paper. Roll out half of the dough into a flat round, shape the edges to form a rim, and spread the filling evenly over it. Roll out the second half of the dough into a similar flat round. Cover the khachapuri with it, sealing the edges tightly. Bake the khachapuri in a preheated oven at 190-200°C for about 35-40 minutes.

When the khachapuri is nicely browned and has a characteristic aroma, you can take it out of the oven. Serve the baked cottage cheese and cheese khachapuri cut into pieces. It's very delicious with sour cream.
