
Cheese and cottage cheese khachapuri
Description
Here's my recipe for making khachapuri with cottage cheese and cheese. The filling for my khachapuri consists of feta cheese and cottage cheese—these dairy products go very well together. You can use any cheeses you like. I made a yeast dough, but there are recipes that use yogurt or soda-based dough. Serve with tea or coffee.

Dissolve the yeast in warm water, add sugar, and let it dissolve completely. Add salt, oil, and yeast mixture to the flour, knead the dough thoroughly. Shape into a ball, cover with a cloth, and let it rise.

Let's prepare the filling. Mix the cottage cheese with feta. Add egg and pepper to taste to the cheese mixture, and mix thoroughly.

When the dough has risen slightly, divide it into 2 parts. From each piece, shape a round flatbread about 1 cm thick.

Place the filling in the center of the flatbread and seal the edges, forming a pouch. Then gently press with your hands to shape the khachapuri.

Traditional khachapuri are fried in a dry skillet and brushed with butter once cooked, but I add a little oil to the skillet and fry them over low heat until golden brown. Serve khachapuri warm!
