
Tuna Khachapuri

Prepare all the necessary ingredients.

Add yeast, sugar, and 2 tablespoons of flour to warm milk. Mix well and let it sit in a warm place for 30 minutes.

Then add salt and vegetable oil. Mix well.

Add the flour in portions.

Knead a soft and elastic dough.

Cover the dough with a towel and let it rise in a warm place for about an hour. It should double in volume.

For the filling, mash the tuna with a fork and mix in the grated cheese. You can use any cheese; I used "Suluguni."

Divide the dough into 2-3 parts. Roll out each part on a floured surface to a thickness of about 3 mm. Spread the filling in a thin layer.

Fold the edges from both sides toward the center.

Pinch towards the center and open the middle by pulling the edges apart. Add the filling.

Place the boats on a baking sheet lined with parchment paper and let stand for 15 minutes.

Then brush with egg yolk and sprinkle with a mixture of poppy seeds, sesame, and cumin.

Bake at 180 degrees until golden brown. Then remove the khachapuri and crack one egg into each boat.

Return the khachapuri to the oven and bake until the egg whites are set. When serving, if desired, add a piece of butter to each boat and sprinkle with fresh herbs. Tuna khachapuri are ready.
