Cheese Khachapuri in the Oven
Description
Delicious baked treat for the whole family. Cheese-filled khachapuri baked in the oven is a very tasty and filling dish—once you've tried a piece, you won't be able to stop. They're easy to prepare. I usually use suluguni cheese, but if you'd like a slightly different flavor, you can use mozzarella, which also melts beautifully. Khachapuri should also be eaten the right way: break off a piece of the bread and dip it into the egg and cheese—the flavors blend together, allowing you to fully enjoy this delicious pastry. Serve warm or cooled. Perfect with tea.

Step 1
Prepare the starter: mix dry yeast with sugar and water until completely dissolved and let it sit in a warm place for about 15 minutes.

When the sponge starts to foam, you can begin kneading the dough. Add salt, flour, and vegetable oil to the sponge. Add the flour in small portions. Knead the dough until it becomes smooth and uniform.

Step 3
Place the dough in a warm spot to let it rise (about one to one and a half hours); the dough should double in size. While the dough is rising, grate the cheese finely.
