Cheese-filled khachapuri cooked in a pan

Description

Homemade pastries for tea. You don't need many ingredients for authentic khachapuri. Besides, they aren't difficult to prepare, although it will take some time (mainly because the dough needs a long rising time). Also, it's best to use matsoni—a special fermented milk starter used in the Caucasus—for making cheese-filled khachapuri on a skillet. If you can't find matsoni, you can use any other fermented milk starter or some full-fat kefir. See the recipe below. Serve with tea or coffee.

    Prepare the ingredients.

    Mix sugar (3 tsp), a little salt and baking soda, add to the starter, and stir well. Pour in vegetable oil (3 tbsp), then start adding flour and knead the dough. Let the dough rise.

    Filling: mix the cheese, egg, and season with salt.

    Mash the filling and add the butter.

    Roll out the dough, add the filling.
