
Cheese-filled khachapuri on kefir
Description
Perfectly pairs with tea and coffee. These khachapuri will even appeal to those following a healthy diet: there's little wheat flour in the dough, but just the right amount of cottage cheese and cheese! If you're on a diet, you can optionally substitute the flour with oat or rice flour. Be sure to taste the suluguni cheese first—it can be salty. In that case, you won't need to add extra salt to the dough. Serve the flatbreads hot, so the cheese stretches when eaten. They can be served with tea or coffee.

Prepare the listed ingredients. Use non-sour cottage cheese and preferably not too salty suluguni. If suluguni is not available, substitute it with regular hard cheese. You can use kefir of any fat content.

Place cottage cheese of any fat content into a deep container and mash it with a fork, breaking up any large lumps if present.

Pour in the kefir and add the chicken eggs. Add salt and any other spices or herbs of your choice. At this stage, you can also mix in finely chopped dill, parsley, or cilantro. Mix everything thoroughly.

Add the high-grade wheat flour in parts and knead it into the mixture. You can substitute it with oat flour, corn flour, or rice flour.

Grate the suluguni on a fine grater and add it to the container, then mix. Be sure to taste the suluguni before cooking. If it is salty, do not add extra salt to the dough.

Heat vegetable oil in a frying pan and place 3-4 tablespoons of the cottage cheese mixture onto the pan, flattening and shaping it into a round patty. Fry over medium heat for about 2-3 minutes on one side. The key is not to make the khachapuri too wide, so that you can easily flip it to the other side.

Using a wide silicone spatula, flip the khachapuri and cook the other side for another 2-3 minutes until golden brown.

In the same way, prepare the remaining khachapuri, frying each side until golden brown. Stack them on a plate, one on top of the other.

When serving, cut the khachapuri into pieces and sprinkle with chopped green onions, cilantro, or parsley. Serve the golden-brown khachapuri with sauces, sour cream, etc. Enjoy your meal!
