Meat-filled khachapuri baked in the oven

Description

Khachapuri are hearty and delicious stuffed flatbreads, usually made with cheese and cooked on a skillet. These flatbreads are baked in Georgia, Ossetia, and Azerbaijan. You've probably enjoyed them many times, yet never tried making them at home. And that's a pity, because preparing tasty khachapuri isn't very difficult. I suggest a recipe for baking meat-filled khachapuri in the oven. If you cook them with love, they will turn out just as good as those made by Georgian chefs. Serve them warm or cooled. Perfect with tea.

    Pour a teaspoon of flour, half a teaspoon of sugar, and dry yeast into half a cup of warm milk, stir, and place in a warm spot.

    When the yeast rises with a foamy cap, pour it into the sifted flour, add salt and vegetable oil.

    Mix and gradually add warm milk. You may need slightly less milk, depending on the dough consistency. The dough should turn out soft and elastic.

    Cover the dough and place it in a warm spot for about 1 hour.

    Sauté the onion until lightly golden. Grind the meat using a blender or meat grinder. Mix the meat, onion, and spices. If the filling turns out too dry, add a couple of tablespoons of broth.

    The dough has risen well, knead it down and divide into 7 parts—this is how many flatbreads we'll get.

    With our hands, flatten each piece of dough into a thin pancake, place the filling in the center.

    Gather the edges of the flatbread into a knot, sealing them well.

    Place the dough ball on the table and, starting from the center, smooth and roll it out to make it thin. The flatbread should be about 15 cm in diameter and approximately 1 cm thick. Make a small hole in the center of the flatbread.

    Place the khachapuri on a baking sheet lined with parchment paper and brush with beaten egg yolk. Bake in a preheated oven at 180 degrees for 20 minutes.

    Brush hot khachapuri with butter and stack them on top of each other. Then cover with a towel and let them "ripen" for about 5 minutes.
