
Khachapuri with beans
Description
Delicious pastries for the whole family. The beans for the filling should be cooked ahead of time. For best results, soak them in water for a day first, then boil for 40–50 minutes. You can safely make the khachapuris larger—in that case, fry them one at a time in the pan. Serve with tea or coffee.

Prepare the ingredients.

Add salt, sugar, and yeast to a bowl.

Pour in warm water.

Add the flour in portions.

Knead the dough.

Leave it for one hour in a warm place.

Then knead it, place it on the mat and roll it into a log. Cut it into pieces. Note: *обомните* is uncommon in Russian; if you meant something else (e.g. flatten, pinch closed, chill), spell it and we can adjust the wording.

Pass the cooked beans through a meat grinder. Add onion that you have first sautéed in a frying pan until golden. Mix.

Roll out each piece of dough, place the bean and onion filling on top.

Pinch the edges together, then roll out the khachapuri slightly.

Heat vegetable oil in a frying pan, add the prepared khachapuri. Fry them over moderate heat until they are nicely browned and golden on both sides.
