
Khachapuri recipe in a frying pan
Description
The pastry is easy and quick to make. For the filling, use any cheese you like best—you can even use a mix of cheeses. Khachapuri are also very tasty with cottage cheese. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients before you start cooking.

Sift all the flour into a bowl, add salt, vegetable oil, and the white of one egg (the yolk will go into the filling).

Add sour cream.

Knead a soft, elastic dough. The dough should not stick to your hands, so add a little more flour if needed. Shape the dough into a ball, place it in a food-grade plastic bag, and let it rest for 20–30 minutes.

Grate the cheese on the coarse side of a grater, add 2 tablespoons of butter melted over low heat in a saucepan and the remaining egg yolk. Mix everything together — this is the filling.

Divide all the dough into several parts (I use 4 parts). Roll out one part with a rolling pin into a round flat cake 3–4 mm thick.

Place a portion of the filling in the center of the flatbread (I use 1/4 of the total amount).

Pinch the edges of the dough into a pouch with the filling inside, then carefully roll this pouch out with a rolling pin into a flat round.

In a dry frying pan, fry the flatbread for 3–4 minutes on both sides; it will puff up while frying.

Brush each flatbread with a piece of butter right after frying. Stack the finished khachapuri on a flat plate.
