Ossetian-style khachapuri

Description

The pastry is simple and quick to prepare. For example, there are many interesting recipes in Caucasian cuisine that use sulguni cheese (or a similar one). Today I've described one for you. Serve cooled or slightly warm.

    Mix the water with sugar and yeast. Let the starter sit in a warm place for half an hour.

    Sift the flour into a deep bowl. Add warm milk, egg, and melted butter.

    Pour the yeast into the milk mixture. Knead the dough for 10 minutes. Shape it into a ball and let it sit for 2 hours at room temperature.

    Divide the dough into 3 parts. Grate the cheese on a coarse grater. Roll out each part of the dough on a floured surface, making the flatbreads not too thin. Place 1/3 of the cheese in the center.

    Then pinch the flatbread in the center to let the air out.

    Flip the flatbread over and roll it out again. Prick the dough several times.

    Brush the top of the khachapuri with beaten egg yolk and sprinkle with a little cheese. Do the same with the remaining portions of dough and cheese.

    Bake the khachapuri on parchment paper for 10 minutes at 200 degrees, then for another 5 minutes at 250 degrees. Enjoy the pastry while it's hot.
