
Megrelian-style khachapuri
Description
The baking is simple and quick. Depending on the region of Georgia, khachapuri can be prepared in completely different ways: from flat Imeretian to boat-shaped Adjarian khachapuri. I suggest you a Megrelian-style khachapuri recipe—this baked dish is loved by everyone in my family without exception. The baking is ready. Serve at the table.

1. To prepare Megrelian-style khachapuri, place kefir in a bowl. Add sour cream and mix everything well.

2. Now add sugar, salt, and unquenched baking soda. Stir and let it sit for 5 minutes. The kefir will quench the baking soda.

3. Grate the cheese on a coarse grater. I use store-bought Caucasian cheese. You can also use Adyghe or Suluguni cheese.

4. Into a bowl with the kefir mixture, pour the melted butter. Sift in the flour. Knead the dough.

5. We will get the following dough. It feels similar to yeast dough, but it is not. Quite dense and doesn't stick to hands at all.

6. Divide the dough into 2 parts. Roll out each part into a large-sized pancake.

7. Divide the cheese mixture into 2 equal parts. Place half of the cheese mixture onto one pancake.

8. Gather the edges of the pancake, release the air, and seal the seam well. Now, use your fingers to spread the cheese inside the pancake, thereby rolling out the pancake to the size of your skillet. The thinner it is, the better, but be careful not to tear the dough so the cheese doesn't leak out during baking.

10. Heat the pan beforehand and fry the flatbread on both sides in vegetable oil over low heat. Use a small amount of oil, about 1 tsp for one khachapuri.
