
Adjarian khachapuri with cottage cheese
Description
Home baking for tea. When serving, if desired, sprinkle the egg with your favorite spices and finely chopped fresh herbs. Keep this recipe in mind. Serve warm or chilled. Perfect with tea.

Lay out all the ingredients on the table. Warm the milk to 35 degrees.

Pour the milk into a large bowl, crumble the yeast with your hands, and add the sugar. Whisk these ingredients vigorously until the yeast has completely dissolved.

Sift 100 grams of flour.

Mix these ingredients until you have a smooth, homogeneous mixture — this is the sponge. Leave the sponge in the bowl undisturbed for 30 minutes, covering the bowl with a kitchen towel.

After 30 minutes, the sponge had developed a porous structure and risen noticeably. Add the butter (80 grams), melted in a saucepan over low heat, to the sponge. Stir everything with a spoon.

Sift the remaining flour and add salt.

Knead a soft dough that does not stick to your hands. You may need a little more flour. Shape the dough into a ball in the bowl, cover with a kitchen towel, and let rise for 1 hour.

Divide the dough into 4 parts.

Lightly flour the work surface and roll out one portion of the dough with a rolling pin into a round about 20 cm in diameter.

Roll up the edges of the flatbread with dowels and shape into a boat, as shown in the photo.

Prepare the cottage cheese filling. Put all the cottage cheese in a bowl, add soft butter (20 grams) and salt. Mix everything with a fork.

Fill the dough boat with one quarter of the cheese filling, spreading it evenly in a layer. Prepare the khachapuri the same way from the three remaining portions of dough and cheese filling. Place all the prepared khachapuri on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for about 20 minutes. Then open the oven and carefully crack one egg into each “boat,” and return to the oven for 5 minutes or until the egg is cooked to your liking.
