
Adjarian khachapuri with kefir
Description

Pour the kefir into a large bowl, add the baking soda and salt, and stir.

Pour in the butter, melted in a small saucepan over low heat. Whisk to combine.

Sift the flour.

Knead a soft dough that does not stick to your fingers. Shape the dough into a ball, wrap it in plastic wrap, and let it rest for one hour.

Grate the suluguni on a coarse grater.

Divide all the dough into 3 parts. Roll each part with a rolling pin into a flat cake about 20 cm in diameter.

Roll the edges of the dough up into rims and shape a boat, as in the photo. You will get 3 such boats.

Fill each dough boat with grated cheese.

Place the cheese boats on a baking sheet lined with parchment paper for baking — bake in an oven already preheated to 180 degrees for 20 minutes. Then take the tray with khachapuri out of the oven and carefully crack an egg onto the surface of each boat, put the tray back in the oven, and bake for another 5 minutes — the egg should cook through.
