This is a simplified version of the dish, as khachapuri cooks much faster on a skillet than with the traditional method. Nevertheless, the taste doesn't suffer much—the dish develops a light crust on the outside while staying tender inside.

Mix the eggs, salt, and sugar in a bowl. Whisk with a whisk.

Add water and flour, mix. Then add baking soda, mix, cover with a lid, and let stand for 15 minutes.

After 15 minutes, add the cheese to the dough. Mix thoroughly with a wooden spoon.

Heat a little oil in a skillet. When the skillet is hot, pour in enough batter to completely cover the bottom. Cook over medium heat for 6-7 minutes.
