
Cheese-filled khachapuri made with cottage cheese dough
Description
The pastry is simple and quick to prepare. To make cheese-filled khachapuri from cottage cheese dough, you will need suluguni cheese (you can also use feta or any other cheese), non-fat cottage cheese, and dried herbs (fresh ones are tastier, but not always available). You can either fry or bake this khachapuri. It turns out very filling. Serve warm or chilled. Perfect with tea.

Let's work on the cottage cheese dough: mash the cottage cheese with butter until smooth.

Add the egg, salt, and sugar. Knead thoroughly.

I recommend sifting the flour to let it absorb oxygen, making the dough softer. Add baking powder to the flour and gradually knead the dough.

The dough should be elastic but not stiff. Put it in the refrigerator, and in the meantime, let's prepare the filling.

Grate the cheese on a grater.

Finely chop the garlic.

Add herbs, garlic, thyme, sour cream, and spices to the cheese, if desired.

Take out the dough and divide it into two parts, rolling each into a flat round.

Line a baking sheet with parchment paper, place one flatbread on it, and evenly distribute the cheese over the surface.

Since I like to bake khachapuri in the oven, I recommend that you (if you're also going to bake it instead of frying) prick it with a fork and brush it with egg.
