
Cheese-filled khachapuri made with puff pastry
Description
Perfectly pairs with tea and coffee. These khachapuri are a great way to add the flavor of Caucasian cuisine to your family table. Contrary to common stereotypes, this recipe is extremely quick to prepare, and the dish remains delicious even when cooled. This version is ideal for beginner cooks, as it's very difficult to ruin. First of all, you need to crumble the feta cheese. I usually mash it with a fork or blend it for literally 30 seconds.

Add finely chopped dill, butter, and egg to the feta cheese, season with pepper, and knead thoroughly (I find it easier to do this by hand).

Carefully roll out the dough. I find it most convenient to work with a thickness of 1-2 mm. Cut the resulting dough into squares measuring 12-15 cm on each side.

Place a mixture of feta cheese, herbs, and spices in the center of each square. I leave a 2-3 cm border from the edge to cover the filling.

Seal the khachapuri: fold the corners toward the center to form an envelope.

Grease the baking sheet with margarine. Place the prepared khachapuri on it and bake in the oven for about 30 minutes. The optimal temperature is 180 degrees. I recommend opening the oven several times and pricking the khachapuri with a fork or toothpick to let the air out, without damaging the crust.
