Khachapuri from puff pastry

Description

The pastry is easy and quick to prepare. Khachapuri is a very popular type of baked good in Georgia, and nowadays you can find a kiosk on nearly every corner selling khachapuri with various fillings. However, it's much more enjoyable to make khachapuri at home, and by the way, it's not difficult at all. You can use ready-made dough, or make the dough yourself if you'd like. To prepare khachapuri from puff pastry, we recommend using different types of cheese: salty suluguni and soft Adyghe cheese, along with some cottage cheese—this will make the filling juicy and flavorful. See the detailed recipe below. Serve warm or chilled. Perfect with tea.

    First, prepare the dough: dissolve the yeast in milk, add salt and pepper, then gradually mix in the egg and flour. Knead the dough.

    Roll out the dough, brush with butter, and roll into a log.

    Roll the roll into a rope. Let it rest for 30 minutes.

    Now for the filling: chop the herbs.

    Mix the cottage cheese, Adyghe cheese, and suluguni well with the herbs. Also add the second egg—only the white. The yolk will be needed to brush the flatbreads.

    Carefully roll out into a flat sheet.

    Place on a baking sheet and bake the khachapuri at 200°C for 15-20 minutes.
