
Zucchini khachapuri
Description
Delicious baked goods for the whole family. Making khachapuri from zucchini is easy, and the whole process won’t take much time. I listed the amount of ingredients for one serving. It’s best to serve the dish on its own with fresh vegetables or your favorite sauce. If desired, the dough can be divided into two parts and simply fried on both sides until done to make two small flatbreads. This recipe is especially helpful when you’re short on time. Keep it in mind. You can serve it with tea or coffee.

Prepare all the ingredients.

Grate the zucchini, add a pinch of salt, mix, and leave for 10 minutes, then squeeze well and transfer to a deep bowl.

Then add about 2/3 of the grated cheese and pepper to taste. Separate the egg into white and yolk. Pour the white through a fine sieve to separate its thinner, watery part. Add the white remaining in the sieve to the zucchini with cheese.

Mix everything well.

Grease a good non-stick frying pan with butter or vegetable oil and transfer the zucchini mixture to it. Reduce the heat to the lowest setting and, using two spatulas, shape the mixture into an elongated form resembling a boat. Cover the pan with a lid and cook over very low heat for about 5–7 minutes (be sure to watch carefully so the bottom does not burn).

Then salt the "khachapuri" and sprinkle it with the remaining grated cheese, place the yolk on top, cover with a lid, and cook for about 3 more minutes. If you want the khachapuri to have a crispy crust on both sides, you can carefully flip it before adding the yolk and sprinkling the cheese.
