Khachapuri from ready-made puff pastry

Description

The recipe won't take much time. Khachapuri is a dish from Georgian cuisine, derived from the words "khacho" (cottage cheese) and "puri" (bread). I'll show you how to easily and quickly prepare khachapuri using ready-made puff pastry. The filling blends into the dough, giving it a creamy, cheesy flavor. You can use any cheese you prefer.

    Thaw the dough and grate the cheese on a coarse grater.

    Separate the yolk from the white.

    Roll out the dough into a square, cut it into 8 small squares, and brush each with egg white using a brush.

    Place a portion of cheese filling on each square. You can add 1 egg and butter to the filling, but that turns out too rich for us. So I stick to just cheese. I can change the type of cheese as desired.

    Pinch the dough as shown in the photo. At this point, you can stop, brush the top of the khachapuri with egg yolk, and bake in the oven. But I like another shaping method of theirs.

    Roll out the sealed khachapuri into a square with a rolling pin, pressing the cheese into the dough. Pinch the edges toward the center of the khachapuri, brushing each corner with egg white.

    Preheat the oven to 180 degrees. Place the khachapuri on a baking sheet lined with parchment paper or a silicone mat. Brush the top of the khachapuri with egg yolk. Bake in the preheated oven until golden brown, about 25–30 minutes.
