    Place the cottage cheese and eggs in a bowl, add a pinch of salt, and thoroughly mix or beat with a mixer.

    Add flour (whole grain or oat) and knead the dough. You can add a little more flour if necessary, but the dough should still slightly stick to your hands.

    Divide the dough into 7 parts.

    Roll out each piece of dough into a flat round and roll up the edges into a log toward the center from both sides.

    Then we join the ends of the rolls, carefully pinching them together. This gives us a little boat like this.

    Place the boats on a baking sheet lined with parchment paper and put them in a preheated oven at 180 degrees for about 10 minutes.

    While the boats are baking, prepare the filling. Mix the cottage cheese with the cheese grated on a grater. If your cheese is unsalted, you can add a pinch of salt to the filling.

    Make a depression in the filling and place the yolk into it. But I got distracted and put the yolk on top of the filling, so it turned into a little hill. Instead of chicken yolks, you can use a whole quail egg.

    Bake the khachapuri for another 5–10 minutes, until the yolk reaches your desired level of doneness. In my case, the yolk is half-set—I like it that way. We're not making classic khachapuri, are we?
