
Gvezeli
Description
The pastry is prepared simply and quickly. Gvezeli pies are also called Gurian khachapuri. Gurian people are an ethnographic group of the Georgian nation. Gvezeli are a very tasty pastry, like many dishes of Georgian cuisine. These pies can be easily made at home. They are baked from the simplest yeast dough. The filling contains suluguni cheese and boiled eggs. If suluguni is very salty for you, you can add an even milder cheese. They can be served with tea or coffee.

Prepare the ingredients for making gvezeli pies.

In a bowl, pour the milk and water, warm slightly. Add the yeast and stir. Pour in refined sunflower oil.

Add salt, sugar, and sifted flour.

Knead an elastic, soft dough.

Cover the bowl of dough with plastic wrap and place it in a warm spot to rise.

Grate the suluguni.

Divide the dough into pieces weighing 50–60 g. Roll each piece into a ball. Roll each ball out into a circle.

Place grated suluguni cheese on the flatbread.

And half a hard‑boiled egg.

Roll the round of dough with the filling into a roll and seal the edges well, shaping it into a crescent.

Place the gvezeli in a baking pan. Let them stand in a warm place for 30 minutes. During this time the pies will slightly increase in size.

Brush the gvezeli with egg and place in a preheated oven at 175–180 °C. Bake for 25–30 minutes.
