We thoroughly clean the goose carcass, cut off excess fat, wing tips, and neck.

Rub the prepared carcass with a mixture of peppers, coriander, and salt. Let it marinate in the refrigerator for 24 hours.

Grate the zest from one orange and mix it with 100 g of wine. Rub the goose with this mixture and return it to the refrigerator for 3-4 hours.

Soak the prunes in the remaining wine. Wash the apples, peel them, and cut into halves or quarters—whichever you prefer.

Stuff our goose with prunes and apples. Use wooden toothpicks to secure the skin at the neck and tail areas. Place the goose onto a greased baking tray and put it into the oven. Roast the goose at 250°C (480°F) for the first 15 minutes, then reduce the temperature to 150°C (300°F). Continue roasting for 2 to 2.5 hours, periodically basting the goose with the released juices. About 15–20 minutes before the end of cooking, brush the goose with honey to achieve a beautiful golden crust.
