
Beef goulash
Description
For cooking, I use beef, which is less fatty than pork but provides a rich broth and pleasant aroma. Goulash can be served as a main dish or as a side to a side dish, for example, with pasta or porridge. Serve the dish hot.

1. Wash the meat and cut it into pieces (4x4 cm). Peel and finely chop the onion, mince the garlic.

2. Rub the meat with salt and pepper. Heat a pan with vegetable oil and add the meat, frying it over high heat for about 5 minutes. Transfer it to a pot.

3. Return the skillet to the heat, add vegetable oil and place the onion in it, season with salt and cook for 5-10 minutes. Transfer the onion to the meat.

4. Crush the cumin in a mortar, add it to the pan where you sautéed the onion, along with paprika, cumin, marjoram, crushed thyme, and cayenne pepper. Sauté for 2-3 minutes.

5. Pour a cup of meat broth into the frying pan with the spices and stir, then transfer everything to the pot with the meat and onions. Add the remaining broth, tomato paste, garlic, sugar, salt and pepper, and bay leaf. Simmer for 1.5–2 hours after boiling.

6. Cook the pasta, then serve the goulash with this side dish.
