Beef Marble Goulash

Description

Goulash is essentially a thick soup that can be made not only with meat but also with vegetables. To prepare goulash from marbled beef, we'll need fresh beef tenderloin, a couple of potatoes, and tomato or tomato paste (optional). I also recommend using broth rather than just water as the liquid.

    Chop the onion into small cubes, melt butter in a cauldron or deep frying pan, and sauté the onion in it until soft and golden.

    While the onions are frying, cut the beef into small pieces. Be careful with the paprika—it's sweet, and the dish might become sweet as well. But if you add it in moderation, the goulash will be flavorful and nicely colored.

    Sprinkle the beef pieces with paprika and other meat spices, add the beef to the onion and sauté for about 3 minutes.

    Pour the meat with broth or water, about 2 cups will be needed. Reduce the heat and simmer the dish until the meat is fully cooked.

    Beef can simmer for half an hour, or even an hour and a half. Meanwhile, peel and dice the potatoes. Add them when the meat is nearly done. Add water as needed, and tomato paste to taste.
