Thoroughly rinse the beef lung, then cut it into large pieces and soak in water for 1 hour to slightly soften the meat.

Then cut the lung into small pieces, place in a pot, cover with water, and start cooking. Bring to a boil and cook, covered, for about two hours. Half an hour before the end of cooking, add salt.

Cool the boiled lung, transfer it to a pan, and fry until a golden crust forms. Then add grated carrots and onion cut into half-rings. Fry until the onion is cooked.
