Gougeres with cheese and bacon

Description

The recipe won't take much time. France is famous for the delicious taste of its pastries. Try making tender cheese rolls, which the French call gougères.

    1. Preheat the oven to 220 degrees. Cut the bacon into cubes and fry in a small skillet until it becomes very crispy. Transfer it onto a paper towel to drain the fat.

    2. In a medium saucepan over low heat, melt the butter. Once the butter has completely melted, add all the flour.

    3. Quickly stir the batter with a wooden spoon until it becomes smooth and uniform.

    Add the eggs one at a time, stirring until each is fully incorporated. Turn off the heat and continue stirring the dough until it becomes thick and glossy.

    5. Add bacon, herbs, cheese, ground pepper, and ¼ teaspoon of salt. Shape into balls using a tablespoon. Smooth the edges with a spoon or your hands (moisten the spoon or fingers to prevent the dough from sticking). Bake in the oven for about 10 minutes, or until the gougères are lightly browned. Reduce the oven temperature to 180°C and continue baking for 15 minutes, until golden brown. Turn off the oven and remove the gougères. Pierce each gougère with a toothpick to let excess steam escape. Place them back into the turned-off oven for another 15–20 minutes to dry slightly.

    6. Serve gougères warm or at room temperature. To reheat the gougères, simply place them in an oven preheated to 350 degrees for a few minutes.
