
Cheese Gougères
Description
For making guzhers, it is best to use cheeses with a pronounced flavor. The pastry is ready. Serve at the table.

Step 1

1. Preheat the oven to 220 °C. Line a baking sheet with parchment paper or a silicone baking mat. Heat the water, cubed butter, salt, and chili powder in a saucepan until the butter melts. Add the flour and stir vigorously until the mixture pulls away from the sides of the pan, forming a ball. Remove from heat and let stand for 2 minutes.

2. Add the eggs, one at a time, beating constantly. The batter will become lumpy, but after about a minute (or so) it will smooth out. Add most of the grated cheese (reserve the rest for sprinkling) and mix well.

3. Pipe the prepared dough into a pastry bag and pipe onto a baking sheet balls the size of cherry tomatoes. You can also do this using two spoons. Lightly sprinkle each ball with the remaining grated cheese.

4. Bake for 10 minutes, then reduce the oven temperature to 190 °C and bake for another 20–25 minutes until golden brown. Serve the gougères warm.
