Description

This Tatar pastry is usually baked for holidays. Hubadeas are very often made for weddings. But we can try this wonderful pastry without waiting for a special occasion. This pie can be called a savory snack, as its filling is not sweet. Serve it with tea or coffee.

    Prepare the cottage cheese. Pour the kefir into a saucepan and cook for about an hour, until the liquid evaporates. After that, reduce the heat, add 4 tablespoons of sugar and 2 tablespoons of butter to the mixture, stir, and remove from heat.

    For the dough, mix warm milk with yeast and two tablespoons of sugar, and let it sit for 20 minutes. Then pour this mixture into sifted flour, add water, egg, and the remaining oil. Knead the dough and let it rise for half an hour. Then punch it down and let it rise again for another half hour.

    Roll out the dough and place it into a baking pan. Put rice and cottage cheese on top, pressing down slightly. Boil the eggs hard, chop them finely, then place the eggs and raisins over the cottage cheese.

    Roll out the second part of the dough and cover the filling, sealing the edges. Cover the pie with a mixture of flour and soft butter (50 g). Bake in a preheated oven at 180 degrees for about 80 minutes.
