Description

Perfectly pairs with tea and coffee. Delicious cheese-filled flatbreads are prepared differently in various regions of Georgia. In this recipe, I want to tell you and show you. Serve cooled or slightly warm.

    Measure the required amount of ingredients for kneading the dough.

    In a small bowl, add yeast and sugar, mix and add 1/3 cup of warm water. Stir and place in a warm spot.

    The yeast mixture should rise with a foamy cap. Add the remaining water and salt to it, and mix.

    And pour the resulting mixture into the sifted flour.

    We knead the dough. It will be sticky and soft, don't be alarmed. Add vegetable oil to the dough and knead thoroughly. Now the dough should not stick to your hands, but will remain just as soft.

    Cover the dough with a towel and place in a warm spot for 30-40 minutes.

    While the dough is rising, let's prepare the filling. Grate the cheese and add about 50-60 grams of water and a little more than half a tablespoon of flour. If your cheese is not salty, add salt to taste.

    And mix everything together until smooth. The mixture should be soft and juicy.

    The dough has risen, divide it into two parts. Also divide the cheese filling in half.

    Take one portion of dough and, on a floured surface, shape it by hand into a thin flatbread, starting from the center. We'll be making Adjaran-style khachapuri, so shape the flatbread oval rather than round. Spread half of the filling over the flatbread.

    Carefully seal the ends of the khachapuri and transfer it onto parchment paper. It is very convenient to bake khachapuri on an inverted baking sheet.

    We'll make the second type of khachapuri. With the remaining dough, shape a round flatbread by hand. Place the filling in the center.

    Gather the edges of the dough around the filling and carefully pinch them together.

    Flip seam-side down and again shape into a flatbread with your hands. Press gently! Make a hole in the center of the finished flatbread. Then transfer to a baking sheet.

    Preheat the oven to the highest possible temperature. In my oven, it's 275 degrees. Bake the khachapuri for about 5-7 minutes, then brush with melted butter and return to the oven—bake for another 5-7 minutes.

    In the center of the boat-shaped khachapuri, make a small indentation in the filling and pour in either a whole egg or just the yolk. Place pieces of butter along the edges.

    And you can start dining. Mix the filling with the yolk, tear off pieces of dough and dip them into the resulting sauce. It's delicious!
