
Georgian pie with tarragon and cheese
Description
The pastry is simple and quick to prepare. The pie turns out large and filling—perfect for serving guests. So it's up to you to decide the portion size you'd like to make. The dough is made with matsoni, though you can substitute it with buttermilk or kefir. Traditionally, the filling consists of herb leaves (tarragon or estragon), eggs, and fragrant green onions. However, we've also been served this pie with suluguni. Here's a detailed recipe. Serve it cooled or slightly warm.

Prepare the necessary ingredients. Rinse the tarragon and onion with cool water. Boil two eggs hard for the filling.

Sift the flour into a bowl. Add baking soda, sugar, and salt to the matzoni (fermented milk), mix well, then add the slightly beaten egg. Gradually add the flour and knead until you get a soft dough. Knead the dough for 10 minutes. At first, it will stick to your hands, but do not add extra flour. Cover with plastic wrap and let it rest in the refrigerator for 15 minutes.

Meanwhile, prepare the filling. Finely chop the tarragon leaves and green onions. Peel the eggs and cut them into large pieces. Grate the cheese on a coarse grater. Melt the butter in a skillet and sauté the green onions for 1–2 minutes. Mix all the filling ingredients, season with salt and pepper to taste, and let cool.

Divide the dough into 2 parts and roll each out into a thin sheet to fit the size of your baking pan (baking sheet). Lightly grease the pan. Place one dough sheet over the entire pan, forming low edges.

Spread the filling evenly over the surface of the pie. Roll out the remaining dough into a thin layer and cover the filling with it, pressing the edges to seal and trimming off excess dough. Use the leftover dough to make decorative shapes. Make several small slits in the center of the pie with a knife.

Mix the yolk with 1 tbsp of water and brush the top of the pie with it. Bake the pie in a preheated oven at 180°C for 40 minutes. Let it cool slightly in the pan.
