
Pear tart with cinnamon

Sift the flour to enrich it with oxygen, place it in a bowl, add salt, and cut in the chilled butter. Rub everything together into crumbs. Add water and knead the dough. Wrap it in plastic wrap and place it in the refrigerator to rest. 2. Wash the pears, peel them, cut in half, remove the seeds, and thinly slice. Place a frying pan over heat, add 50 grams of butter and sugar. Wait until it turns brown, then add the pears and cinnamon. Simmer without stirring for 15 minutes, then transfer to a plate. 3. Line a baking form with parchment paper. Carefully arrange the pear slices on the bottom and pour half of the syrup over them. Take out the dough, roll it out to the size of the form, and place it over the pears. Bake in the oven at 200°C (392°F) for 30 minutes. 4. Boil the remaining syrup over heat until a light caramel forms, then pour it over the tart 10–15 minutes before it's fully baked. Once ready, remove the tart from the oven, let it cool slightly, then invert the form onto a plate so the pears end up on top. Sprinkle lightly with cinnamon and sugar.
